Mozzarella Meatballs

Just look at that mozz melt...


I could've...

a) eaten the rest of the container of mini mozzarella balls with a spoon
b) turned them into a more filling snack or part of a meal

Even though I was really leaning towards a, I chose b, and it was so worth it!


Ingredients

  • 1 3/4 lb of meatloaf mix (veal, beef, and pork)

  • 1/4 cup parmesan cheese

  • 1 large egg

  • 1/4 loaf of Italian bread, cut into cubes, softened in water

  • salt

  • pepper

  • garlic powder

  • fresh minced basil and parsley

  • about 20 mini mozzarella balls

Step by Step

  1. Preheat your oven to 400.

  2. Mix together meat, parm, egg, bread, and all seasonings/herbs in a bowl.

  3. Form about 20 meatballs slightly larger than the size of a golf ball.

  4. Make an indent in the center of each meatball with your thumb.

  5. Place a mozz ball inside and form meatball back to cover the cheese.

  6. Place a piece of parchment paper on a baking sheet and line up the meatballs.

  7. Bake for 15-20 minutes.

  8. Eat alone as a snack or serve with your favorite pasta + sauce as a meal!

3 meatballs = 30g protein
