Chipotle Turkey Burritos

We love a good carby burrito that is high in protein and keeps us full, am I right?!

Ingredients

  • 1lb ground turkey

  • 1 can black beans (drained + rinsed)

  • white rice (or whatever rice you like)

  • large flour tortillas

  • your fav salsa

  • plain greek yogurt

  • your fav shredded cheese

  • chipotle seasoning

  • garlic

  • 1 onion

  • salt

Step by Step

  1. Bring a small pot with rice, 1/4 t. salt, and 1.5 cups of water to a boil (we used about 6oz. of rice)

  2. Reduce to a simmer, cover, and cook until rice is tender: 15ish minutes.

  3. Halve and peel your onion and mince your garlic.

  4. In a large pan over medium-high heat, add 1 T olive oil.

  5. Once hot, add onion, garlic, ground turkey, and a pinch of salt. Cook until no pink remains.

  6. Add chipotle seasoning to taste, beans, and 1/4 cup salsa. Add more if it seems too dry.

  7. Remove the mixture from the burner and add in 4 T of greek yogurt.

  8. Assemble the burritos with rice, filling, and cheese.

  9. You can cook the burritos on the stove for 1-2 minutes per side, or just microwave them for about 20 seconds if you're short on time!

  10. Serve with a greek yogurt + hot sauce combo on the side.

This recipe makes about 4 burritos!
