Chipotle Turkey Burritos

We love a good carby burrito that is high in protein and keeps us full, am I right?!

Ingredients
1lb ground turkey
1 can black beans (drained + rinsed)
white rice (or whatever rice you like)
large flour tortillas
your fav salsa
plain greek yogurt
your fav shredded cheese
chipotle seasoning
garlic
1 onion
salt
Step by Step
Bring a small pot with rice, 1/4 t. salt, and 1.5 cups of water to a boil (we used about 6oz. of rice)
Reduce to a simmer, cover, and cook until rice is tender: 15ish minutes.
Halve and peel your onion and mince your garlic.
In a large pan over medium-high heat, add 1 T olive oil.
Once hot, add onion, garlic, ground turkey, and a pinch of salt. Cook until no pink remains.
Add chipotle seasoning to taste, beans, and 1/4 cup salsa. Add more if it seems too dry.
Remove the mixture from the burner and add in 4 T of greek yogurt.
Assemble the burritos with rice, filling, and cheese.
You can cook the burritos on the stove for 1-2 minutes per side, or just microwave them for about 20 seconds if you're short on time!
Serve with a greek yogurt + hot sauce combo on the side.
This recipe makes about 4 burritos!
